Maple Glazed Grilled Cauliflower

This is one of my favorite ways to enjoy barbecue—vegetarian style.
Spice Profile: allspice, ancho chile, black pepper, brown sugar, chipotle, cloves, cinnamon, coriander, cumin, garlic, kosher salt, mace, nutmeg, smoked paprika, tomato powder
At one point, I tried making cauliflower steaks and… DON’T. You’ll get one decent slice and a bunch of sad little pieces. Instead, do this:
Take one medium to large head of cauliflower and break it into florets, keeping them as whole as possible.
Toss the florets in a bowl with about ½ cup oil, (olive oil works, or any neutral oil). Add the full spice packet (2 tsp Stock+Spice Maple Glazed Cauliflower blend) and mix well to coat.
Grill over medium-high heat, turning every couple of minutes until nicely charred in spots—some blackening is good. Mine took about 14 minutes on the grill.
Remove from heat and toss the hot cauliflower with:
1/4 cup or more maple syrup
1 Tbsp apple cider vinegar, (or any vinegar you like)
1 tsp soy sauce
Stir well, and enjoy!
Serve on buns like BBQ pulled pork, pile it next to your favorite sides, or eat it straight from the bowl, (no judgment).
